Goierri is also cider land, a beverage deeply rooted in Basque culture. Traditionally made from local apples, cider is more than a drink: it is an experience. During cider season, from January to April, you can enjoy the traditional txotx, tasting cider directly from the barrel accompanied by a typical menu featuring cod omelet, grilled ribeye steak, and Idiazabal cheese with walnuts.
Moreover, the region is rich in other gastronomic products known for their quality and authenticity. Among the most representative delicacies is the Beasain blood sausage, crafted from a traditional recipe combining onion, leek, pork blood, fat, and a selection of spices. This product is so cherished that it has its own brotherhood, which organizes tasting competitions.
Another traditional sausage is mondeju, an artisanal product made with meat from Latxa sheep, only found in Goierri. Zaldibia is considered the capital of mondeju, hosting the Mondeju Competition during the Sheep Day or Ardiki Eguna in October for nearly 20 years. In Ataun, you can taste the black variety known as mondeju beltza. Mondeju is a whitish sausage made by filling the sheep intestine with leeks, peppers, eggs, sheep fat, a touch of chili, and various spices. The best time to enjoy it is from October to February.
Txakoli is another gastronomic treasure of Goierri. This fruity, slightly sparkling white wine is made from the native Hondarribi Zuri grape. A perfect pairing is to enjoy it well chilled with a piece of Idiazabal cheese.
Goierri's gastronomy is also distinguished by its sweets. The region’s pastry chefs are reviving old recipes, offering delights such as Zegama’s walnut pastries (intxaur pastak), Segura’s cake, and the Martintxo, a pastry created in honor of Beasain’s patron saint, San Martin de Loinaz.
During your visit to Goierri, you will not only enjoy these products in quality restaurants but also explore gastronomic museums, visit the iconic Ordizia market on Wednesdays, enjoy cider houses, and visit various farms. You will have the opportunity to buy meat directly from producers and participate in tastings and pairings.
This club is made up of more than 100 members, including restaurants, cider houses, grills, pastry shops, pintxo bars, and various types of accommodations. It also includes gastronomic museums, visitable traditional producers, catering companies, delicatessen shops, and tourism and hospitality companies, promoting the region’s rich gastronomy.

Simple hotel, perfect for sleeping and resting — no need to ask for more. Extraordinary people, very kind and highly professional, great dining service. Ideal location if you want to explore the Basque Country, just an hour's drive from all major sites. I’ll be back.
A very peaceful hotel to disconnect. The staff is very attentive and helpful. Daniela is such a sweetheart, always attentive and ready to recommend places to visit — truly charming. The food was exquisite, a 10! Those croquettes… ummm! I’d definitely come back. Thanks to all the hotel staff. Greetings and big hugs from a girl from the Canary Islands.
The friendliest hotel staff I’ve ever met. Daniela is pure charm and sweetness, and Jon gives you incredible tips on places to visit and where to park. I’ll recommend this hotel to anyone visiting the Basque Country, and if I ever return, I’ll definitely stay again. The breakfasts and dinners were fabulous. In short, a 10 out of 10.
We went to this hotel for a tournament. The staff was the best — super friendly and lovely, they treated us wonderfully. The restaurant surprised us: good food with generous portions at an affordable price. Clean and comfortable rooms.
Wonderful stay at the hotel: very comfortable and clean beds. TV and A/C were perfect for comfort. Storage space was great, although the hangers were very old. Lighting was excellent. The bathroom was very clean, although there were no towel hooks for the shower.
